<P>PROBLEM TO BE SOLVED: To provide a method for cooking a burdock by preventing its bending by which an unbent burdock can be obtained to remove harshness and both harshness removal and prevention of blackening of the burdock can be carried out. <P>SOLUTION: This method comprises a step of dipping a shredded burdock in an isotonic solution containing nearly equal solutes dissolved in an intercellular fluid of the burdock, preferably further a step of dipping the shredded burdock therein and then heating the burdock in a solution containing the same solutes as or nearly the equal to those dissolved in the isotonic solution or further adding about 1-3wt.% of vinegar added to the isotonic solution in which the shredded burdock is dipped. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
