<P>PROBLEM TO BE SOLVED: To provide an enzyme that degrades an α-glucan or its degradation products and simultaneously catalyzes a disproportionation reaction for transferring and extending glucose by α-1,6 bond. <P>SOLUTION: Dextran glucanase is produced by introducing a gene encoding Paenibacillus-derived dextran glucanase to Escherichia coli. The dextran glucanase is contacted with a substrate selected from a group consisting of an oligosaccharide having an α-glycoside linkage, an α-glucan and its degradation products to produce a sugar selected from a group consisting of isomaltosyl oligosaccharide, isomaltosyl glucan, isomalto-oligosaccharide and dextran. <P>COPYRIGHT: (C)2012,JPO&INPIT |
