PROBLEM TO BE SOLVED: To provide a manufacturing method of breads or baked confectioneries, providing breads or baked confectioneries having fragrant flavor.SOLUTION: Roasted grain flour obtained by roasting grain flour without water addition treatment of 0.1 to 15 mass%, preferably 3 to 10 mass% is used in a raw material grain flour of breads. The roasted grain flour is preferably roasted wheat flour, roasted rye flour or roasted corn flour obtained by heating wheat flour, rye flour, roasted corn flour in a closed vessel at 150 to 250°C for 10 to 60 mins, especially roasted rye flour or roasted corn flour. |
