Compositions for generating flavours in foodstuffs, foodstuffs incorporating such compositions and processes for producing them. In particular, compositions for generating cooked (e.g. cooked meat) flavours in a foodstuff in situ, which compositions comprise flavour precursors which react on heating to generate the flavours.
