With respect to an ice cream composition containing milk, concentrated milk, milk cream, sugars, and an emulsifier, provided is an ice cream composition containing 100 parts by weight of milk, 35-50 parts by weight of milk cream, 1-5 parts by weight of a mixture of locust bean gum and guar gum as an emulsifier, 15-25 parts by weight of sugars, based on 100 parts by weight of the milk. The ice cream containing lactic acid bacteria produced by a method of the present invention has its own chewy texture as well as a good flavor. In addition, the ice cream containing lactic acid bacteria is produced using only natural and organic ingredients, excluding synthetic ingredients, thereby being very beneficial for health. |
