PURPOSE: Method for preparing extract of fish meat using by-products of fish is provided to supply stock feed containing chitosan, DHA, and EPA by reusing waste. CONSTITUTION: Method for preparing extract of fish meat using by-products of fish comprises the following steps:(i) a first step to add 100-2000wt.% of water to 100wt.% of by-products of fish, and dissolve the flesh and bone of fish under a condition of 100°C or more and 1.1 atmospheric pressure or more for 2-4hours, or a condition of 60-105°C and normal pressure for 1-5 hours; (ii) a second step to add 10-200ml of chitosan whose deacetylation degree is more than 95%, and viscosity is more than 12,000cps, and make it cohesion-precipitated to separate solidified matter and solution; and (iii) a third step to filter the matter, dewater, and dry. The prepared extract of fish flesh can be contained in a feed in amount of 0.1-5.0wt.%.
