PROBLEM TO BE SOLVED: To provide a new substance mixture having improved dissolution properties and improved taste and flavor, a method for producing the mixture and a method for using the substance in foods.SOLUTION: There are provided a substance mixture comprising (a) polyphenols, flavonoids and/or diterpene glucosides, (b) polysaccharides and optionally (c) saponins with the proviso that the content of arabinogalactan proteins in the component (b) is ≥11 wt.%; and a method for producing the substance mixture by dehydrating the mixture to a residual water content of ≤5 wt.% and pulverizing or granulating the dried product to a powdery product. The substance mixture is used for producing foods containing the mixture in an amount of e.g. 0.2-0.5 wt.%, especially beverages, more specifically lemonade and iced tea. |
