摘要 The present invention relates to a method of maintaining the freshness of peeled taro which comprises the following steps: dipping taro in purified water; heat-processing the taro at a first heat-processing temperature for a first heat-processing time; and removing the purified water remaining on the surface of the taro. The first heat-processing temperature is 45-65°C, and the first heat-processing time is 45 seconds- 1 minute 15 seconds. According to the present invention, the quality of the taro is improved, and the taro is capable of being easily stored for a long time.
