PURPOSE: A purification method of sugar ester is provided, thereby cheaply preparing high quality sugar ester which is an environment-friendly surfactant useful as additives of foods, cosmetics, medicines and resins. CONSTITUTION: A purification method of sugar ester comprises the steps of: reacting sugar fatty acid ester with unreacted fatty acid methyl ester, fatty acid, fatty acid salt and remaining reaction solvent to prepare a sugar ester mixture; collecting an organic layer from the sugar ester mixture; drying and pulverizing the organic layer; adding the pulverized organic layer into a neutral salt solution containing one or two compounds selected from sodium chloride, magnesium sulfate, potassium sulfate and potassium acetate; and filtering the mixed solution, wherein the content of the remaining reaction solvent in the sugar ester mixture is 0.001 to 10 wt.%; the remaining reaction solvent is dimethylformamide or dimethylsulfoxide.
