PROBLEM TO BE SOLVED: To provide baked confectionery excellent in crispy palate feeling, in spite of containing soybean peptide, and reduced in bad smell and offensive taste derived from soybean peptide. SOLUTION: The baked confectionery contains a thermolysin hydrolyzate of soybean protein. The baked confectionery which keeps an improved crispy palate feeling and a reduced bad smell and offensive taste derived from soybean peptide is obtained by using a thermolysin hydrolyzate of soybean protein.
