<P>PROBLEM TO BE SOLVED: To provide a stable highly trehalose-containing syrup which is slightly crystallizable or non-crystallizable at room temperature and is hardly contaminated with microorganisms, and to provide a use thereof. <P>SOLUTION: This α,α-trehalose-containing syrup in whichα,α-trehalose is dissolved and contained in an amount exceeding the solubility of theα,α-trehalose per water content at room temperature, at a temperature corresponding to the solubility, preferably in an amount of 18.5 to 25.0 w/w% per the syrup, and one or more other saccharides are dissolved and contained in larger amounts than the amount of the trehalose. Theα,α-trehalose-containing syrup preferably contains water in an amount of 25 to 35 w/w%. A food or drink containing the syrup, and a method for producing the same. <P>COPYRIGHT: (C)2007,JPO&INPIT |
