PROBLEM TO BE SOLVED: To provide a mass-producible gummy candy having a novel texture, more excellent in-mouth meltability than a conventional gummy candy, crisp and simultaneously soft feeling, and excellent flavor release (rise of perfume) at a repast time.SOLUTION: A gummy composition contains 0.8 wt% or more, while a gummy candy contains 0.8-1.5 wt%, of diacetyl tartrate monoglyceride which is one kind of an emulsifier in an ordinal gummy candy dough.SELECTED DRAWING: Figure 1 |
