<P>PROBLEM TO BE SOLVED: To obtain a perfume composition having remarkably unique fermentation-like or full ripeness-like fragrance and flavor characteristics, especially cheese-like fragrance and flavor characteristics as compared with a conventional perfume substance and extremely useful as an excellent and unique persistent fragrance and flavor-imparting or modifying agent in wide fields such as favorites or foods and drinks. <P>SOLUTION: This perfume composition comprises 3-ethylthiobutyric acid esters represented by formula (1) (wherein, R denotes a 1-6C straight-chain or a 1-6C branched alkyl group) as an active ingredient. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
