A staged rotisserie for cooking poultry includes a housing (11) having an inlet end (12) and an outlet end (13) and a plurality of discrete heating stations (31-36) spaced within the housing (11) between the inlet end (12) and the outlet end (13). A plurality of poultry spits (S1-S11) are moved through the housing, each spit (S1-S11) supporting a poultry (P) thereon. An admission mechanism (100) is provided for controlling admission of spits (S1-S11) into the housing (11). An advancement and driving mechanism advances the spits (S1-S11) through the housing (11) in sequential fashion and drives the spits (S1-S11) in rotation within the housing (11), and is operative to ensure that each spit (S1-S11) resides within the housing (11) for a pre-determined length of time to ensure that the poultry (P) is properly cooked, thereby avoiding undercooking and overcooking. |
