PROBLEM TO BE SOLVED: To provide a taste improver which develops tastes of taste ingredients contained in the water phase of a water-in-oil oil and fat composition clearly in the oral cavity and makes better the texture of the water-in-oil type oil and fat composition.SOLUTION: A taste improver for a water-in-oil oil and fat composition contains a glycerol succinic acid unsaturated fatty acid ester as an effective ingredient.
