METHOD FOR PRODUCING ACETALDEHYDE BY ENZYME REACTION

PROBLEM TO BE SOLVED: To provide a technique for efficiently producing acetaldehyde from pyruvic acid by utilizing an enzyme reaction. SOLUTION: The method efficiently produces acetaldehyde by carrying out an enzyme reaction while distilling formed acetaldehyde away without damaging the activity of pyruvate decarboxylase in the enzyme reaction for forming acetaldehyde by decarbonating the pyruvic acid by using pyruvate decarboxylase.
