The present invention relates to a method for producing high purity maltoheptaose using a mutant enzyme cyclodextrin glucanotransferase (CGTase). When the mutant enzyme CGTase is used as in the present invention, only maltoheptaose (G7) of a high purity is capable of being specifically produced from betacyclodextrin. A method for producing maltoheptaose according to the present invention comprises putting a mutant enzyme cyclodextrin glucanotransferase (CGTase) having an amino acid sequence written in the sequence number 1 into a substrate solution comprising betacyclodextrin, thereby making the mutant enzyme cyclodextrin glucanotransferase (CGTase) react with the substrate solution comprising betacyclodextrin.
