PROBLEM TO BE SOLVED: To provide a method of manufacturing an organic acid, which enables organic acid fermentation with a high content rate of the organic acid without using saccharification enzyme while keeping low cost. SOLUTION: The method of manufacturing an organic acid includes: a first step of inoculating koji mold to a starch-containing product; and a second step of fermenting the cultured product prepared in the first step without separation by adding an enzyme, which liquefies starch, to the cultured product and using an organic acid producing microorganism.
