1427323 Preserving meat products MARS Ltd 3 May 1973 [11 May 1972] 22196/72 Heading A2D A method of preserving a raw animal tissue material or uncooked artificial proteinaceous material simulating such tissue comprises infusing into the uncooked, moist material edible water-soluble solutes including a sugar and/or polyhydric alcohol until the material has a water activity of less than 0.85, whereby it is rendered bacteriologically stable, and packing the uncooked, infused material in the absence of free oxygen. The infusion may take place in an aqueous solution at 15 to 40‹C for 4 to 6 hours. An alternative procedure to the above method comprises placing the uncooked, moist material together with an aqueous solution of edible water-soluble solute including a sugar and/or polyhydric alcohol in a package which is thereafter sealed, the infusion of the solute into the material occurring in the package in the absence of oxygen until the material has a water-activity of less than 0.85. The preservation of horsemeat, pigs lungs, pigs maws and liver is exemplified. |
