摘要 PURPOSE:To subject a fresh food material to aging and heat sterilization treatment in electricity applying action at a short time and enable to continuously produce a packed food having good taste at a large scale, by housing a packed food obtained by packing a fresh food material with a permeable packing film in an electroconductive liquid in an insulating vessel under submerged conditions. CONSTITUTION:A fresh food materials (e.g. ham or sausage) is packed by a permeable packing film 102 to form a packed food wholly having electroconductivity. When the packed food 101 is housed in an electroconductive liquid B put in an insulating vessel 104 under submerged conditions, the packed film 102 has further improved electroconductivity by permeating electroconductive liquid B from outside. When electricity applying action is applied to the packed food 101 through the electroconductive liquid B in this state, electricity passes through the electroconductive liquid B, packed film 102 and then fresh food material A uniformly and the food material A is rapidly subjected to aging and heat sterilization thereby and packed food having good taste is produced.
