发明名称 PROCESSING METHOD OF SQUID
摘要 A seawoned squid with skin is prepd. by (a) quick-thawing the freezed squid and washing, (b) steaming the obtd. squid for 1-3 min. in 45-60 deg.C water and cooling slowly into 5 deg.C or less, (c) seasoning 100 kg cooled squid with 7 kg sugar, 0.2 kg MSG, 1.5 kg edible salt, 0.005 kg sodium-5'-inosinate, 0.005 kg guanosine-5'-monophosphate, 0.2 kg glycine, 0.1 kg beta-alanine, 0.1 kg succinic acid and 2 kg sorbitol, and (d) drying the seasoned squid at 45-55 deg.C for 10-15 hrs. and packaging to obtain the final product contg. 35 ± 2 % water. The obtd. seasoned squid has a good taste and flavor.
