A process is disclosed for cooking by extrusion expanding dough into piece foodstuffs such as snacks, breakfast cereals, muesli components, porous extrudates of fruit, vegetables or meat for instant baby food. The process is characterized in that an expansion zone is arranged after the extrusion zone. The extrudate is cut at the end of the expansion zone.
