PURPOSE:To reduce the degree of dumping of a substance to be cooked by a method wherein when cutoff of a power source occurs during operation, the cutoff time is measured and when the measured time is below a specified time set by each process, the process is continued and when it exceeds the specified time, the operation is brought into a stop. CONSTITUTION:A thermo-hygrostat chamber wherein freezing, refrigerating, defreezing, preheating, and fermentation are executed, in the order, is provided with a source feeding means, a cooling means 6, a heating means 10, a moistening means 11C, and an air circulating means 8. In this case, a process time setting means 21 to set the specified operation times of the respective processes of the means 6, 10, 11C, and 8, a temperature detecting means 13 for detecting the temperature in a chamber, and a humidity detecting means 14 for detect the humidity in the chamber are provided. Based on the outputs from the detecting means 13 and 14, the means 6, 10, 11C, and 8 are controlled by a control device 20. When cutoff of a power source occur, the cutoff time is measured by a measuring means 21C and when the measured time is below a specified time set at each process, the process is continued after restoration. |
