PROBLEM TO BE SOLVED: To produce rice having decreased allergen content and eatable without causing allergy, deterioration of taste and disturbance of nutrient balance by subjecting rice to high-pressure treatment to effect the selective extraction of albumin and globulin from the rice. SOLUTION: Rice is subjected to high-pressure treatment under quick pressurizing and quick depressurizing condition comprising the pressure-increasing rate of >=2MPa/sec, the retention pressure of 50-90MPa, the retention time of >=30sec and the pressure-decreasing rate of 2MPa/sec. The treated rice is immersed in >=0.5 pts.wt. (based on 1 pt.wt. of the rice) of a solution of a neutral salt (e.g. sodium chloride) having a concentration of >=0.001mol to selectively extract albumin and globulin from the rice and obtain the objective rice having decreased allergen content, eatable without causing allergy, free from the problem of the disturbance of nutrient balance caused by the elimination diet therapy and giving cooked rice having the taste of ordinary rice. |
