<p>Methods for improving the filterability of extracted sugar juices are provided. The methods comprise treating the extracted juices with an endo-levanase devoid of sucrase (invertase) activity or a combination of an endo-levanase and dextranase prior to carbonation. Treatment with an endo-levanase even at low dosages efficiently eliminates filtration problems associated with contaminating levans.</p> |
