<p>PROBLEM TO BE SOLVED: To produce pickles packed in small bags, having flavor and texture without time dependently reducing qualities and capable of being easily filled quantitatively and sterilized by filling pickles, a seasoning solution, guar gum and a cellulose-splitting enzyme in small bags, sterilizing and cooling them. SOLUTION: Pickles packed in small bags preferably having 5-20 g contents are produced by filling preferably 0.4-0.6 pt.wt. of guar gum based on 100 pts.wt. of the sum amount of pickles and a seasoning solution, 0.4-0.6 pt.wt. of cellulose- splitting enzyme based on 100 pts.wt. of guar gum respectively into small bags, closing the bags, acting the cellulose-splitting enzyme by standing preferably at 15-30 deg.C for 20-50 hours, then sterilizing and cooling the bags.</p> |
