PURPOSE: Provided is a process of producing apple wine containing ginseng, thereby producing high quality of apple wine which has the pharmacological efficacy and the aroma of ginseng, and minimizes damage to the human body by alcohol toxication. CONSTITUTION: The process of producing apple wine containing ginseng comprises the steps of: preparing 6000 mL of apple juice; adding white sugar into the apple juice to reach Brix degree of 24 Bx; adding 1 mL of metal kali having a concentration of 100 ppm and yeast 10% into the sugar-added apple juice then dividing the apple juice into 6 portions; adding 0.1% to 5% of ginseng into each of 6 portions, wherein a first portion is not added with ginseng, a second portion is added with 1g of ginseng(0.1%), a third portion is added with 5g of ginseng(0.5%), a forth portion is added with 10g of ginseng(1%), a fifth portion is added with 30g of ginseng(3%) and a sixth portion is added with 50g of ginseng(5%); then fermenting each portion of apple juice added with ginseng for 14 days to manufacture apple wine with ginseng.
