RESVERATROL-REINFORCED GRAPES AND PRODUCTION METHOD THEREOF

PURPOSE: Resveratrol-reinforced grapes and a production method thereof are provided, thereby the resveratrol-reinforced grapes can have improved anticancer effect because resveratrol is a natural anticancer agent derived from grapes. CONSTITUTION: A microorganism Plasmopara viticola isolated from grapes is capable of inducing the synthesis of resveratrol in grapes, wherein Plasmopara viticola is isolated by separating 8 strains from fungi grown on the surface of grapes and selecting a strain showing an excellent resveratrol synthesis-inducing activity. The method for producing resveratrol-reinforced grapes comprises inoculating Plasmopara viticola to the harvested grapes and culturing them at 10deg. C for 2 weeks to increase the resveratrol content in the grapes.
