<p>Boned beef and the flesh of other quadrupeds is formed, whilst still hot and supple, into a shape suitable for distribution in individual packages. The machine employed consists of at least one tube with four continuous driving belts arranged around its periphery. A box, for the introduction of the meat consists of a fixed part and a movable part (I) with a stem this part can be moved so that the two parts come together to complete a circle in continuation of the tube. The meat is introduced into the box through an upper opening, when (I) is in the 'open 'posn; when the latter is closed the meat is given a cylindrical shape and a piston pushes it into the tube along the common axis while the belts draw it to the end of the tube. The meat is refrigerated as it moves along the tube and is at about 0 degree C at the outlet, so that it retains its circular shape. The whole operation is effected without manual contact and in a period sufficiently short so that germs will not have time to contaminate the meat.</p> |
