1501355 Producing triglycerides by fermentation FUJI OIL CO Ltd 15 April 1976 [17 April 1975] 15625/76 Heading C5C A 1,3-disaturated-2-unsaturated triglyceride, the saturated fatty acid residues of which have 16, 18 or 20 C atoms, the unsaturated fatty acid residue being mono-unsaturated with 14-20 C atoms, is produced by culturing a microorganism of genus Endomyces or Rhodosporidium, preferably E. vernalis and R. toruloides, collecting the cells and extracting the fats and oils, containing the above glyceride, from the cells. The extract is preferably fractionated to remove trisaturated glycerides by fractional crystallization. The extraction of the cells is preferably carried out with hexane. The product is a cocoa butter substitute.
