New organoleptic for foods (fruit, meat, dairy products, baked products and vegetables) which act as aldehyde sources to supplement/replace those already present is a linear acetal of formula:- R-CR1R2-(CH-OCR3-OR4)n-CRRR1R2 (I) or a vinyl ether of formula:- RR1R2C-O-CH=CH-R5 (II). In the formula n = 0-5; R and R2 are each H, alkyl, alkoxy, acyl or carboxy or together form a cyclic acetal structure; R1 is the same as R and R2 except that when n = 0, R is not = H; R3 is 1-11C hydrocarbyl; R4 is 1-7C hydrocarbyl and R5 is H or 1-9C hydrocarbyl. 1,2,3-TRi (1'-ethoxy)ethoxy propane (III), 1,2-di (1'-ethoxy)ethoxy propane, 1,2,3,4,5,6-hexa (1'-ethosy) ethoxy hexane and 1,2-di (1'-ethoxy)propoxy propane are claimed. (I) and (II) do not destroy the existing aroma, are stable to moisture, heat and oxidn. under normal storage conditions, may be blended with a dry aromatiser and "fix" a higher percentage of acetaldehyde. |
