The present disclosure is related to low cholesterol shrimp, additionally enriched with unsaturated fat acids (HUFA), present in the lipids found in muscles. Likewise, the present invention describes a method of obtaining said shrimp, including the use of a biologically acceptable amount of a bivalve concentrate administered through a novel food for crustaceans. The obtained shrimps by the described process, are additionally enriched with highly unsaturated fatty acids (HUFAs) such as EPA and DHA, that are present in the muscles; presenting higher tolerance to stress, growing rapidly during production in culture and having no differences in color, smell, taste, texture and other sensory characteristics in relation to shrimp which are fed with commercial foods made from fishmeal or fish oils. The crustaceans of the present invention are suitable for human and other animal consumption. |
