An enzymatic gelatin preparation process comprises the following steps: bone particle pulverizing, acid pickling, gel extraction, filtering, concentrating and sterilizing. The acid pickling method comprises: mixing a raw material of bone meal and water in a 1:1-5 ratio by weight with a pH value of 1-2.5; soaking for 6-10 hours; centrifugalizing and separating to remove a liquid phase; and collecting a solid substance settled on a cylindrical wall.
