In the new process, certain reaction products of polyglycerol (polyglycerin) and fatty acid are used to lower the surface tension of aqueous solutions of organic or inorganic salts. The reaction products are ones which are obtained if a polyglycerol having a hydroxyl number (hydroxyl index) from 860 to 800 is esterified under acid catalysis with a fatty acid in a molar ratio of 1:0.3 to 0.7 until a hydroxyl number from 770 to 680 and an acid number (acid index) of at most 0.7 are reached. The proposed esterification products are added to the solutions (compositions) to be treated in an effective amount which is generally an amount from 0.005 to 10 % by weight, based on the weight of the solution (composition).
