<p>PROBLEM TO BE SOLVED: To provide a method for producing a fermented liquor that effectively contains 100% garlic ingredient without using sake, water and/or other already produced alcoholic beverages at all. SOLUTION: This method produces fermented liquor by preparing a raw white cloudy sake by adding a liquid composed of squeezed 100% garlic juice without using water at all to a mixture of sake yeast, steamed rice and malted rice, and then by conducting an alcoholic fermentation of the mixture. The liquid composed of the squeezed 100% garlic juice is obtained as a deodorized garlic liquid by mixing the squeezed garlic juice with soybean oil, stirring the mixture, leaving the mixture at rest, collecting a clear solution obtained after separating floated matter and sediment, then heating the solution at 60-95 deg.C, followed by leaving the solution at rest and then removing floated matter.</p> |
