PROBLEM TO BE SOLVED: To provide a crust shaver intended for bread crust shaving in high yield without the need of any manual operation and irrespective of uneven surface of bread. SOLUTION: This crust shaver has such a scheme that a rotary blade assembly is constructed by circumferentially setting up at intervals support shafts 52 loosely engaged with many shaving blades 56 in piles between a pair of disks 42; each of the shaving blades 56 has a tooth part 62 on an arc-shaped front rim in the rotating direction, and when the rotary blade assembly 14 is rotated, the shaving blades 56 are rolled reversely to the rotating direction of the assembly 14 against centrifugal force at different angles with respect to an object to be shaved in compliance with the unevenness thereof; therefore the tooth parts 62 are engaged on bread as the object in the identical depth irrespective of its unevenness, enabling the crust thereof to be shaved off in a given thickness irrespective of its unevenness.
