The present invention provides an image capturing device, an image capturing system, and a vehicle for decreasing the influence of D/A conversion of a digital image signal and the influence thereof in a transmission process of an analog image signal. An image capturing device 13 is provided with: an image processing unit 22 that generates a first digital image; a D/A conversion unit 23 that converts the first digital image into an analog image and outputs the analog image; an input/output unit 14 that receives reference information indicating an image-quality characteristic value of a second digital image generated on the basis of the analog image; and a control unit 25 that controls the operation of the image processing unit 22 to perform adjustment of the image-quality characteristics of the first digital image so that the image-quality characteristic value of the second digital image approaches a prescribed target value.
