The pidan with shell was processed. The fowl eggs with shell were soaked in alk. soln. as convenient method such as mixed soln. of sod. caseinate-water, sod. caseinate sod. carbonate-water or lime-water, and treated in heating circumstance over 58≦̸C within 2 hr. The coatings preventing contact of atmosphere are appropriate for the long time storage. The pidan presented the elimination of strong smell in short time and a characteristic flavor.
