PURPOSE:The titled solidified vegetable oil that is produced by stirring sesami seed oil, peanut oil, kaya oil or olive oil together with cyclodextrin in the presence of water, thus showing high storability because of its freeness from odor diffusion and high resistance to oxidation. CONSTITUTION:Cyclodextrin such as alpha-cyclodextrin (cyclohexaamylose) or beta- cyclodextrin (cycloheptaamylose) is mixed with about 0.3-1wt%, based on the dextrin, of water to form a paste. To the paste, is added a vegetable oil such as sesami seed oil, peanut oil, kaya oil or olive oil in an amount of about 0.2-1.0 pts.wt. per 1pt of the dixtrin and they are sufficiently kneaded. The resultant product is dried by air blowing or under reduced pressure to produce the solid clathrate compound. |
