NEW MATERIAL:A 5-octenal of geometrical isomerism shown by the formula I[Y is =O, -(OR)2, two R are 1-10C alkyl, 2-10C alkenyl, 2-10C alkynyl, or form 2-3C methylene bond; wavy line is cis-position, or trans-position]. EXAMPLE:Cis-5-octenal diethyl acetal. USE:Having perfume and flavor like rose, jasmine, floral, improved durability, useful as a modifier providing lasting perfume and flavor. Usable in wide range, e.g., drinks, cosmetic, health and hygiene, drugs, agricultural chemicals, etc. PROCESS:For examle, a 5-octene-1-ol of geometrical isomerism shown by the formula II is oxidized with a chromic acid type oxidizing agent preferably at -10 deg.C to 50 deg.C, to give a compound shown by the formula III in a compound shown by the formula I, and the compoud shown by the formula III is acetalized with an alcohol shown by the formula IV under acidic conditions, to give a compound shown by the formula V.
