In the case of control of an electrical continuous-flow heater having a plurality of switchable heating power stages and a heating power stage which can be regulated, it is intended to set a desired nominal temperature exactly even in the case of different flow rates. For this purpose, in a control phase, the heating power is connected virtually up to a nominal heating power which is determined by measurements of the inlet flow temperature and the temperature increase in the outlet temperature per unit time.
