The present invention relates to a process for producing polysaccharides which makes it possible especially to prepare a fermented sweet beverage or sweet kefir. According to the process, a medium containing an excessivly large amount of sucrose is inoculated with solutions containing DOLLAR *06<BHNT]Lactobacillus brevis, Leuconostoc mesenteroides and, optionally Lactobacillus casei. After formation of a gel, Saccharomyces florentinus and Koecklera apiculata are introduced into an aqueous solution of unrefined cane sugar. The neo-crystals formed can be used to prepare either polysaccharides or a fermented beverage. Application in the food industry and, more generally, in any industry using polysaccharides.
