The present invention relates to processed meat and a manufacturing method thereof, capable of maintaining freshness during an aging process. According to the present invention, the method comprises the following steps: (S1) grinding washed vegetables and mixing the ground vegetables; (S2) adding seasonings to the mixed vegetables to add flavor; (S3) inserting finely ground or cut meat into the seasoned vegetables and mixing the same; (S3-1) flavoring the meat processed by mixing the vegetables and meat with a fragrance composition solution extracted from wild cultivated ginseng; (S4-1) shaping the processed meat flavored with the wild cultivated ginseng fragrance composition solution into a predetermined amount and shape; (S5-1) vacuum-packaging the shaped and processed meat flavored with the wild cultivated ginseng fragrance composition solution; and (S6-1) aging the vacuum-packed and processed meat flavored with the wild cultivated ginseng fragrance composition solution at a low temperature. |
