PROBLEM TO BE SOLVED: To provide a bean starch of which aging is inhibited without using additives for overcoming a problem with easiness of aging while the starch derived from beans is high in amylose content and keeps high gelation power.SOLUTION: A bean starch is manufactured by separating it from other components in water system from bean starch concentrate with protein content of 20 wt.% or less obtained by classification after dry milling beans. Preferably the bean starch concentrate is manufactured by an air classification, median size of the bean starch concentrate is 10 μm to 40 μm and the bean starch is derived from mung bean or pea.SELECTED DRAWING: None |
