Aspartic acid peptide compound of formula (I), useful as sweetener, was obtained by the reaction of isocyanate derivative (VI) with (V). Here, R1 denotes benzyl or nitro benzyl to protect carboxyl group. R2 is C1-4 lower alkyl, C4-7 cyclo alkyl or noncyclo alkyl group. R3 is C1-4 lower alkyl. Z is benzyl or -COOR2.
