The invention relates to a universal ebulliometer making it possible to measure, continuously or intermittently, various numerical parameters of a water/alcohol solution, whatever its sugar content. This ebulliometer comprises, mounted inside an ebulliometric reactor or heater 6 associated with a condenser 1 provided with a cooling device 2, 3, 4, 5 and with a heating device 8, a sensor 7 consisting of at least one resistance probe and a pressure sensor means 30 which are intended to pick up various parametric data at the alcoholic solution, filtering/amplification means 13 intended to process the signals emitted by the probes and an analog/digital processing unit 12, 14. <IMAGE>
