The apparatus for peeling the skin and cutting the head of a filefish wherein a head fitting device, skin-peeling device, and a head cutting device are interlocked with driving gears of the same size, a fixed shaft is installed on the respective devices to provide rotators therearound, in the fitting device, a plurality of tongs are installed to a vertical support and simultaneously opened/closed by an interlocking gear, in the skin-peeling device, driving rods are installed to move up and down by cams of the fixed shaft, skin-peeling tongs are installed on the end of the driving rods and interlocked by a hanger and a support lever, and in the head cutting device, horizontal rods are installed on gear rods so that fitting and head cutting are performed by a cutter placed on the end of the horizontal rods, thereby greatly enhancing the processing efficiency of filefish and reducing processing cost.
