PURPOSE: Provided is a method for manufacturing functional side dishes which have nutrients of medicinal herbs and vegetables, and are effective in preventing or treating various diseases. CONSTITUTION: The method for manufacturing functional side dishes is characterized by the following steps of: i) mixing flour with medicinal herbs and vegetables such as boxthron, membranous milkvetch, hazelnut, gingko, snake's beard, mushrooms, chestnut, bean, burster, licorice, sunflower, ginseng, potato; ii) mixing the mixture with vitamin, lipid, minerals, protein, carbohydrate, sodium carbonate, and vinegar to make paste; iii) aging and fermenting the paste; and iv) adding a little bit more water to the paste and aging and fermenting the paste, and then making side dishes with the paste. |
