PURPOSE: A method for producing dumpling fillings containing marsh snail meat is provided, thereby producing a dumpling with distinct blue color and marsh snail taste. CONSTITUTION: The method for producing dumpling fillings containing marsh snail meat comprises the steps of: boiling the marsh snail in water for 3 to 4 minutes to separate its meat from its shell; mixing the marsh snail meat with water in the ratio of 1:10 to 1: 20; adding an appropriate amount of ginger, radishes, garlic, pepper and anchovy powders into the marsh snail meat solution; boiling the mixture for 20 to 30 minutes; and removing the water. |
