PURPOSE: Provided is a manufacturing method of frozen fish slices containing a ginseng extract. Therefore, the fish slices has a reduced fish smell and an improved taste, as well as used as a health food. CONSTITUTION: A manufacturing method of frozen fish slices containing a ginseng extract comprises washing fish flesh and dewatering it naturally; mixing the dewatered fish flesh with the concentrated liquid of ginseng roots and a saline solution and leaving it at 5 deg.c for 2 hours; mixing agar, salt, sodium L-glutamate and water, followed by boiling and cooling to 12 deg.C to give a seasoning sauce; dipping the fish flesh in the seasoning solution to coat the surface of the fish flesh with agar and aging it for 1 hour; and packing the aged fish flesh in a PAN and freezing it. |
